Hedgehog Biscuits

How cute are these? Really easy to make and kids will love baking them and eating them. You need a heart shaped cutter to make the pointy shapes. Or if you have a steady hand, you can use a knife and hand cut the dough.


Ingredients:

100g butter

200g self-rising flour (or you can use plain)

125g white sugar

1 egg

50g chocolate chips

Handful of desiccated coconut

Beat the sugar and the butter together, until all the sugar granules are combined into the butter. Make sure the butter is at room temperature.

Whisk in the flour and then the egg and bring the mixture together to form a dough. You might need to use your hands for this bit.

Roll out onto a worktop which has been sprinkled with flour. Roll them quite thin, around half cm. Then use a heart shape cookie cutter to cut them out. You get the hedgehog shape by straightening the bottom bit of the cookie with your fingers, so you are left with a pointy biscuit.

Place them on a greased baking tray and chill them in the fridge for at least half an hour. Then bake them for around 8 minutes at 200 degrees.

When they are cool, melt the chocolate in a bowl over a pan of simmering water and then pour some melted chocolate over the bottom half of the biscuit. Sprinkle desiccated coconut over the chocolate and tap the biscuit on the side of a bowl so that the excess coconut falls off. Use the end of a teaspoon to drop melted chocolate onto the pointy bit of the biscuit for the nose and eyes.

Leave them on some baking paper for the chocolate to set.

This recipe makes 16 – 20, depending how big your cutter is.
