A basic muffin recipe can be added to add carrots & seeds, as in this one, or blueberries or chocolate chips.
This couldn't be easier. Just mix all the ingredients together in a large bowl.
This recipe makes 10.
Ingredients:
350g self-raising flour
1 teaspoon salt
125ml vegetable oil
150g brown sugar
2 eggs
250ml milk.
For carrot muffins, add a grated carrot, 1 teaspoon ground cinnamon, a handful of chopped walnuts and pumpkin seeds.
For blueberry muffins, add 175g blueberries and the zest of a lemon.
For chocolate muffins, add 200g chocolate chips.
Divide the mixture between 10 muffin cases until the mixture is almost at the top of the case. Bake for 25 minutes at 180 degrees.
